Found this great recipe for Fish Tacos. The Cornslaw is extra delightful!
Corn Slaw:
2 tbsp mayonnaise
2 tbsp greek yogurt
2 tbsp. lime juice
2 tbsp. chopped fresh cilantro
1 tbsp. honey (optional)
2 c. shredded purple cabbage (optional)
1 c. corn kernels
1 jalapeño, minced
Mix everything in a bowl
Other fillings:
Flavored black beans (1/2 can)
Add cumin and red pepper powder. Microwave for 3 minutes.
Avocado / Guac
Add salt to taste (and onion)
Fish Filet / Meat
However you like it
